Halibut Caddy Ganty

Ingredients

6 Halibut fillets, about 2 1/2 lbs

1 1/4 tsp mild fish rub

1/2 tsp Worcestershire sauce

juice of 1/2 lemon

1 cup panko

1 1/4 tsp paprika

3/4 cup sour cream

1/3 cup mayonnaise

1/3 cup onion, finely chopped

Directions

Wash the halibut fillets and pat dry.
Combine fish rub, worcestershire, and juice.
Marinade the fish in the mixture for about 2 hours
Combine mayo, sour cream, and onions and set aside
Remove halibut from marinade and sear on hot grill pan until golden brown
Place halibut on butters sheet pan
Spread top of halibut with sour cream mixture and dip the top of each in panko.
Bake at 375 until just cooked through
Sprinkle each fillet with paprika and finish the fish under the broiler.

Caddy Ganty is on many menus throughout Alaska. Mrs Caddy Ganty was the wife of Pros Ganty, one of the founders of Pelican Cold Storage in Pelican, AK. In the 1920's the town was named after his company.
